This is for when you want to be uplifted & happy and maybe dance around a little with a cocktail nearby. Now how to pair a happy playlist with a happy cocktail? It could be argued that ALL cocktails could be considered happy. Well, this may be a bit subjective but I thought that I would come up with a recipe that has a couple of variations. The recipe for Vodka with Basil Lemonade is below the song videos listed for you to try out. This drink is fabulous even without any vodka, so anyone can enjoy! Vodka with Basil Lemonade
4 cups water
3/4 cup lemon juice
3/4 cup plus 2 tbs. sugar
Add 1 cup water in a saucepan with the sugar, put on low heat and dissolve sugar. Mix the rest of the ingredients in a pitcher along with the dissolved sugar from the saucepan. Chill.
For the Cocktail
Assorted cut up fresh fruit ( I used Oranges)
but many fruits will work, strawberries, cherries, blueberries, peaches etc.
Add one part Vodka to three parts lemonade plus an added sprig of basil. This drink is terrific without vodka also for anyone to enjoy!
Parmesan, Basil, and Lemon Wafers

1 Cup Shredded Parmesan
2 tbs. shredded Basil
1/2 tbs lemon zest
Preheat oven to 400 degrees F.
Mix all ingredients together in a bowl. Transfer a heaping tablespoon of Parmesan mixture onto a silicone or parchment-lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended for this recipe. Repeat with the remaining cheese mixture, spacing the spoonfuls about 1/2-inch apart. Bake for 3 to 5 minutes or until golden and crisp. Cool and use a flat spatula to transfer from a lined baking sheet.
