After being inside for so long, we look for more reasons to enjoy the outdoors and the warmer weather.
Taking the time to slow down and appreciate each other is well worth it. If you enjoy eating breakfast for dinner, you could use these romantic recipes for date night also!
We used an indoor table and placed it outside along with table settings and flowers that we had handy around the house. Use whatever you have to create a special outdoor brunch.
We also included a brunch playlist, conversation starters and ideas for an activity for you to enjoy after your outdoor brunch.

All of these date ideas can be enjoyed at home. This makes it convenient for the food to stay hot or cold and cleaning up is so much easier.

Eggs Benedict
Hash brown potatoes

Many of these items can be made ahead which will make assembly a piece of cake. You can make ahead the hollandaise, cupcakes and crepes.
Eggs Benedict
Ingredients
2 English muffins split and toasted
4 pieced Canadian bacon or (ham, sliced avocado, sliced tomato, cooked spinach)
4 poached eggs
Hollandaise sauce or (Knorr Hollandaise, at your local grocer)
Butter
Instructions
Split and toast English muffins, butter after toasted. Place any cooked ham or bacon on top of each muffin. Place poached egg on top of meat or veggies. Top with hollandaise.
Hash browns
Ingredients
Potatoes (about 3 medium/ 2 large potatoes)
1 tbsp. Oil
½ tsp. Salt
¼ tsp. Garlic powder
Parchment paper
Instructions
Peel and shred the potatoes. Rinse in colander. Pat with a paper towel. Add all ingredients in a bowl and toss. Line a baking sheet with parchment. Spread out potatoes in the pan. Bake at 350 degrees until browned. About 15-20 mins.
Strawberry crepes
Crepes
Ingredients
1 ½ cup Milk
1 cup Flour
2 Eggs
1 tbsp.. Oil
2 tbsp. Sugar
Instructions
Combine all ingredients in a bowl. Mix well. Heat a greased skillet over medium high heat, spoon 2 tbsp for a 6 inch skillet. (add more if you are using a larger skillet ) and swirl to coat. Brown one side of the crepe.
Repeat with remaining batter. Makes approx 10-15 crepes.
Filling
Ingredients
Strawberries or (fresh peaches and raspberries)
1 tbsp. Sugar
Powdered sugar
Whipped cream if desired
Instructions
Slice about 6 strawberries per crepe. Sprinkle with a tsp. Of sugar. Let sit for 5 mins. Place strawberries and sugar inside of the crepe. Roll the crepe, sprinkle with powdered sugar and whipped cream if desired.
Mimosas
Ingredients

Assorted fruit
Instructions
Fill each glass with 2 parts champagne. Add 1 part Oj. Garnish with fruit if desired.
Varieties
You can use whatever juices that you enjoy. In the Spanish area Goya has peach and guava .nectar that we have enjoyed.
Use grapefruit juice, pomegranate juice, peach nectar (Bellini), guava nectar
With fresh peaches, oranges, strawberries, raspberry as a garnish.
Another option is to make Sangria! Sangrias are perfect for a brunch and we have lots of options to check out!
Vanilla/coconut cupcakes
Ingredients
This is my go to vanilla cake. I added coconut creme (Goya) instead of milk for these cupcakes. Feel free to use milk instead if desired.
½ cup butter, softened
¾ C
cup sugar
2 eggs
1 tsp vanilla
1 ¼ C
cup flour
1 ½ tsp. Baking powder
¼ tsp salt
1 ½ cup coconut creme (or milk)
Instructions
Cream together the butter and sugar. Add eggs and vanilla. Combine dry ingredients in a bowl and add ½ the flour and ½ milk mixture to the butter and sugar. Add the remaining flour and milk, do not over mix. Fill 12 cupcake papers 2/3 full. Bake 350 for 12-14 minutes.
Coconut Icing
Frosts 12 cupcakes
1 ½ Cup powdered sugar
1 stick butter, softened
1 tsp coconut creme (Goya)
(double, triple recipe as necessary)
Mix together at high speed. Top with shredded coconut
Outdoor Brunch playlist
Enjoy a great brunch playlist while you are outside eating. When we put together our theme date nights, we usually add music, activity and questions to ask to make it a complete date night.
Details are what makes it special. It’s a shame to spend time making a nice meal and then to just clean up.
By adding other important elements, it becomes a more memorable day or evening.
After brunch activity
Take the time to savor a little more time together. Plan to take a walk or to drive to a lake and enjoy the view. The idea is to enjoy some nature and slow down.
You can also plan an activity and plant some veggies or flowers either in containers or in a bed.

It doesn’t take that much planning to create romantic recipes for date night or to celebrate with your best friend with our dinner ideas for two.
Friendships need as much attention as do romantic relationships. It’s as easy as checking your calendar for a nice day.
Many of our recipes for date night don’t require anything unusual and are easily switched with ingredients that you probably have on hand.
Our outdoor brunch is not difficult to do and is really quite impressive.
